Overnight Cinnamon Bun Recipe

These couldn't be easier.  Whether you've tried to make bread before or not, this is a super easy, lazy way to make a nice treat.  You can easily double this recipe and put a dozen in the freezer.






1/2 c sugar
2 eggs
4c flour                           Rub these ingredients together.  For low calorie, omit ALL the butter. 
1/2 c butter                     You might have to add a splash of milk to compensate.
shake of salt


1tsp sugar                                      
1/2 c lukewarm water         Mix sugar in water.  Sprinkle yeast on top and let rise 10 minutes
1 Tbsp yeast (any type)


Add: yeast mixture, milk, beaten eggs, to flour mixture.  Mix well.  Place in the fridge for the night inside a plastic bowl with a lid.


In the morning: sprinkle flour on your counter and a little on top of the dough.  Knead for a minute or 2.  Add more flour if sticking, and using a floured rolling pin, roll dough to 1/4" thickness in a rectangle shape.* Spread with butter, as you would toast.  Rub brown sugar into the butter with a spoon - about a cup.  Sprinkle with cinnamon and roll up into a log.  Slice the log into 1" pieces.  Place pinwheel side up in a greased 9x13 pan.  Bake at 350 for 15 minutes.  


* Alternative to cinnamon buns: spread rolled out dough with your favourite jam and 1c shredded cheese.
*For Pizza Buns: leave out the 1/2c sugar in the dough.  Proceed as normal.  Spread rolled out dough with a little pizza sauce, oregano and Parmesan cheese.
